3 Healthy Recipes
If you are hosting a Super Bowl Party or kindly bringing a dish, why not offer some healthy alternatives in addition to the traditional 6 foot sub, potato salad and chips?
Here are 3 healthy recipes that will be a big hit for those who want hearty food with lots of flavor!
Super Food Salad
1-2 bunches Kale
1/3 cup almonds lightly toasted
1/3 cup pine nuts
1/4 cup dried cranberries
1/2 cup fresh blueberries
1/4 cup diced red onion
1 apple diced or several baby orange slices
avocado diced (optional)
goat cheese (optional
chopped carrots and red cabbage (both optional)
(add more ingredients as desired or if there's more kale)
Dressing:
2 Tbls. olive oil
1/4 cup Bragg's apple cider vinegar
1 tsp. dijon mustard
1 tsp. poppy seeds
1 tsp. maple syrup
juice of 1/2 lemon
Shake in a small jar and pour over kale salad.
Here's a hearty, healthy chili that is always a big hit at my house:
Sweet Potato and Black Bean Chili
1 tablespoon Extra Virgin Olive Oil
2 medium sweet potatoes, peeled and diced
1 yellow onion
3 cloves garlic, minced
2 tablespoons chili powder
1 tablespoon ground cumin
¼ teaspoon cayenne pepper
¼ teaspoon Himalayan salt
3 cups water
2-15 ounce cans black beans or 1 cup dry black beans prepared
2 medium tomatoes
1 lime, juiced
1 bunch fresh cilantro, chopped
Heat oil in soup pot over medium heat. Add sweet potato and cook, stirring often, about 6 minutes. Add onion and cook until the onion softens, about 6 minutes. Add garlic, chili powder, ground cumin, cayenne pepper and salt, stirring for about 1 minute. Add water and bring to a simmer. Add beans, tomatoes and lime juice; increase heat to high and return to a simmer, stirring often. Remove from heat and stir in cilantro.

Since the Super Bowl is in Arizona this year, add some Southwestern zest to the appetizer table with
Coyote Caviar
1 (15-ounce) can black beans, drained, rinsed (or freshly boiled beans)
1 (4-ounce) can chopped black olives, drained
1/4 cup chopped onion
1 (4-ounce) can chopped green chiles
1 clove garlic, minced
1/4 cup chopped cilantro
2 Tbls. vegetable oil (you can use 1/2 oil, 1/2 regular)
2 Tbls. freshly squeezed lime juice
2 teaspoons chili powder
1/4 tsp. salt
1/4 tsp. crushed red pepper flakes
1/4 tsp. cumin
1 tsp. black pepper
8 ounces cream cheese, softened
2 hard-cooked eggs, peeled, chopped (optional)
Salsa to taste (optional)
1 green onion sliced
Combine the first 13 ingredients in a bowl and mix well. Chill, covered for 2 hours. Spread the cream cheese on a round serving plate. Cover with the black bean mixture. Arrange the eggs and salsa around the edge of the black bean mixture. Sprinkle with the green onion. Serve with tortilla chips.

Some women get jewelry for their wedding anniversary. Not me! My husband knows what I like and several months ago (before Christmas) I had mentioned I would love to have a Vitamix. I didn't get one for Christmas, but 7 months later, on our anniversary, he surprised me with this AMAZING machine.
I am so excited! Too excited really. I just spent GOBS of money on produce to make a million different recipes ranging from smoothies to soups. And it's only me drinking and eating the stuff. My husband is not into smoothies but he is intrigued. Tonight I witnessed him blending some concoction together without a recipe and it tasted pretty bad. Hopefully, he'll follow some real recipes. 🙂
ANYway, I am smitten with my new Vitamix. My fitness/nutrition coach girlfriend came over today and showed me how to make some Creamy Cauliflower soup. It was really easy and so delicious! I just had to share this!!! It's one of my all time favorite blissful recipes, which I got from my friend Michele Rusinko.

These are amazing! I usually stuff portobello mushrooms with a combination of breadcrums, tomatoes and other stuff I like. My daughter is not eating any gluten or cow dairy now (and she doesn't like tomatoes), so I came up with a recipe that she loves. I love it too!
6 Portobello Mushrooms
Chopped and sauteed (I don't measure!) – onions, mushroom stems, garlic, shredded carrots, spinach, pecorano/ramano cheese, pine nuts or add any other veggies you like. Sometimes I top this off with herbed goat cheese.
Mix all ingredients, stuff mushrooms, bake for 20+ minutes at 350 or until golden and yummy looking.

A delightful, healthy and easy-to-make dish!
Spaghetti Squash Lasagna
This is just how I like it – full of veggies and lotsa spice!
1 Spaghetti Squash, cooked (soften in microwave, cut in half, scoop out the seeds, back flesh side down in 1/4" water at 350 for 45 minutes or until soft.)
1/2 onion
1 green pepper
8 oz. chopped mushrooms
3 cloves garlic
salt and pepper to taste
1/8+ teaspoon cayenne pepper (or to taste)
Italian cheese (I use provolone and/or mozzarella, pecorano/ramano, etc. – 1 to 2 cups)
Large jar of favorite pasta sauce
Sautee veggies in olive oil (I just pour!). Add tomato sauce and spices, cook until heated through.
Layer first the sauce, then some spaghetti squash, then more sauce, then cheese and repeat for another layer. Top with more cheese.
Bake at 350 for 45 minutes. Let stand a few minutes before serving. There will be some liquid after the first serving is taken; I draw it out with a baster. Enjoy!
