These are amazing! I usually stuff portobello mushrooms with a combination of breadcrums, tomatoes and other stuff I like. My daughter is not eating any gluten or cow dairy now (and she doesn't like tomatoes), so I came up with a recipe that she loves. I love it too!
6 Portobello Mushrooms
Chopped and sauteed (I don't measure!) – onions, mushroom stems, garlic, shredded carrots, spinach, pecorano/ramano cheese, pine nuts or add any other veggies you like. Sometimes I top this off with herbed goat cheese.
Mix all ingredients, stuff mushrooms, bake for 20+ minutes at 350 or until golden and yummy looking.

The other day I attended a Spahliday party at a friends and she had us make our own bath salts with essential oils. (We also enjoyed foot massages!)
I thought it was such a great idea that I’d share it with you. If you want to treat your girlfriends this holiday season, create a table with a vinyl tablecloth and add the following items:
*Epsom Salts in a bowl w/a scoop
*A variety of essential oils
*Fractionated Coconut oil or other carrier oil
*Spoon, bags, ties
*Instructions for making the salts
-grab a bag, scoop epsom salts in bag
-poor a teaspoonful of oil in bag
-add essential oils (have a few recipes and lots of oils on hand for variety)
-tie bag and shake to mix
Have fun!
You can always make some of these yourself and give them as gifts.

A delightful, healthy and easy-to-make dish!
Spaghetti Squash Lasagna
This is just how I like it – full of veggies and lotsa spice!
1 Spaghetti Squash, cooked (soften in microwave, cut in half, scoop out the seeds, back flesh side down in 1/4" water at 350 for 45 minutes or until soft.)
1/2 onion
1 green pepper
8 oz. chopped mushrooms
3 cloves garlic
salt and pepper to taste
1/8+ teaspoon cayenne pepper (or to taste)
Italian cheese (I use provolone and/or mozzarella, pecorano/ramano, etc. – 1 to 2 cups)
Large jar of favorite pasta sauce
Sautee veggies in olive oil (I just pour!). Add tomato sauce and spices, cook until heated through.
Layer first the sauce, then some spaghetti squash, then more sauce, then cheese and repeat for another layer. Top with more cheese.
Bake at 350 for 45 minutes. Let stand a few minutes before serving. There will be some liquid after the first serving is taken; I draw it out with a baster. Enjoy!

This is one of those things that brings me joy. At 57 years old I am enjoying the strength and flexibility that comes with a regular, challenging yoga class. Hanging upside down is one of my favorite things to do.
